Determination of Thiosulfate and Pyrophosphate in Crayfish Wash Powder

SUNNYVALE, CA (May 2014) — Thermo Fisher Scientific has developed a simple, efficient, sensitive, and reproducible capillary ion chromatography (IC) method for determining thiosulfate and pyrophosphate in crayfish wash powder. Application Note 1088: Determination of Thiosulfate and Pyrophosphate in Crayfish Wash Powder demonstrates that this application is easily executed using a Reagent-Free IC system capable of high-pressure IC controlled by data management software. The analyst simply adds water and samples to separate thiosulfate and pyrophosphate on a specialized anion-exchange column, the Dionex IonPac AS19 capillary column, thus enabling accurate determination. Sample thiosulfate and pyrophoshophate were identified by IC-mass spectrometry.

Although crayfish are a popular seafood, overconsumption of this delicacy can result in excessive myoglobin in the blood, which can trigger rhabdomyolysis. The wash powder used to clean crayfish is suspected of causing the problems associated with excessive ingestion of crayfish, and the harmful ingredients of the wash powder are thiosulfate and phosphate-related compounds such as pyrophosphate. Therefore, for monitoring and control purposes, it is necessary to establish an efficient method to determine these components in crayfish wash powder.
